After several months of renovation, the chef and his team inaugurated the Bistr’AU, the Michelin-starred Jérôme Nutile gourmet restaurant, the boutique, and the hotel. Everything is thoughtfully arranged around a landscaped garden designed by Frédéric Faure, a Meilleur Ouvrier de France and friend of the chef. This beautifully restored farmhouse now offers a peaceful green haven just minutes from the city center. It features four elegant rooms with garden views  including the sumptuous Flamenca Suite blending tradition and modernity for a relaxing, refined stay. Every detail is designed for guest comfort: luxurious bedding, Nuxe cosmetics, private secured parking, and a fully equipped 69 m² seminar room for private events or meetings. Not to mention the delicious breakfast, featuring fresh homemade pastries, fine cheeses and charcuterie, and seasonal fruits  all served on a white tablecloth in the elegant dining room. The Gastronomic Restaurant “Jérôme Nutile” welcoming and refined setting is ideal for sharing the chef’s passion and love for cuisine. Soft tones and large windows overlooking the garden create a cozy atmosphere, perfectly suited for appreciating the chef’s contemporary, authentic, and deeply personal culinary creations. Each dish leaves a lasting impression  especially the chef’s signature dish: toro (bull meat) with oysters, an absolute must-try. At the heart of the restaurant lies an impressive cheese-aging cellar, showcasing over 70 varieties like precious jewels. This unique and delicious touch is the perfect way to complete an unforgettable meal not to mention the exquisite desserts. Nearby, the wine cellar, nestled within the stone stairwell of the Mas’s tower, displays a curated selection of wines from exceptional local producers.

The Brasserie “Le Bistr’AU” opened in 2014, this brasserie serves generous, high-quality cuisine made from fresh, seasonal ingredientsoccasionally enhanced by luxury products like truffle. The warm, bistro-style ambiance features an open kitchen, hearty dishes, and very reasonable prices. The menu changes daily, alongside a seasonal à la carte selection.

Coming from a family of bakers and pastry chefs, Jérôme Nutile chose the kitchen as his life’s calling to share joy and emotion through food. After earning his BEP and Bac Pro from the Nîmes Hospitality School, he trained in some of the most prestigious establishments in France and abroad. From his beginnings at Abbaye de Sainte-Croix, to his role as Head Chef at Georges Blanc’s restaurant, and then as Executive Chef at Le Castellas in Collias (30)  where he earned two Michelin stars  his journey is nothing short of inspiring. In 2011, he was awarded the prestigious title of Meilleur Ouvrier de France.
